Avocado, Pear and Haloumi Salad

Ingredients
  

  • 400 g spinach, baby
  • 1/4 onion, red thinly sliced
  • 1 avocado thinly sliced
  • 1 pear quartered and thinly sliced
  • 40 g almonds, slivered
  • 1/2 pomegranate optional, seeds only
  • 320 g cheese, haloumi sliced into 1/2cm pieces
  • 1 lemon juiced
  • 1 bunch parsley, flat leaf, fresh flat leaf, finely chopped
  • 1 tsp sugar, caster

Instructions
 

  • Divide the baby spinach, onion, avocado, pear and almond slivers evenly amongst 4 dinner plates.
  • To make the dressing combine the lemon juice, sugar and parsley in a bowl and combine. Set aside.
  • Heat a non-stick fry pan over medium heat. Grill haloumi for 2-3 minutes each side or until golden in colour. Remove from the pan and immediate add to the salad.
  • Sprinkle with pomegranate seeds and drizzle with dressing. Serve and enjoy!
