Cashew and Vegetable Stir Fry

Stir fries are healthy, quick and easy to prepare, so it’s no wonder that they are staples in many house holds. This colourful vegetable stir fry is a tasty way to get more vegetables and fibre into your day. Don't forget to keep left-overs for lunch the next day!

Ingredients

  • 1 tbsp oil, peanut
  • 2-3 clove garlic roughly chopped
  • 1 chilli, red finely diced (large)
  • 1 broccoli chopped into individual florets
  • 2 cup snow peas ends removed
  • 80 g cashews, raw roughly chopped or kept whole
  • 2 carrots chopped into strips

Instructions

  • Heat the oil in a large frypan or wok. Add the garlic and chilli and sauté for 1 minute, don’t let it burn.
  • Next, add the carrots and broccoli and sauté for 2-3 minutes. Then add the snow peas and cashews and toss for a further 2 minutes. Sprinkle with salt and pepper to taste.
  • Serve as an accompaniment to meat, chicken or tofu.
