Cashew and Vegetable Stir Fry
Recipe Serves 4 people
Ingredients
- 1 tbsp oil, peanut
- 2-3 clove garlic roughly chopped
- 1 chilli, red finely diced (large)
- 1 broccoli chopped into individual florets
- 2 cup snow peas ends removed
- 80 g cashews, raw roughly chopped or kept whole
- 2 carrot chopped into strips
Instructions
- Heat the oil in a large frypan or wok. Add the garlic and chilli and sauté for 1 minute, don’t let it burn.
- Next, add the carrots and broccoli and sauté for 2-3 minutes. Then add the snow peas and cashews and toss for a further 2 minutes. Sprinkle with salt and pepper to taste.
- Serve as an accompaniment to meat, chicken or tofu.
