Asparagus almond fetaGrilled Asparagus with Almonds

Springtime is asparagus season! Why not mix up your weeknight veg options with this simple and delicious side dish. Serve this up with a grilled salmon fillet or a pan fried chicken breast.  It will add flavour to even the most basic meal. A side dish like this can also be perfect to take along to a shared dinner or weekend BBQ.

What’s more, asparagus is anti-inflammatory:

Many scientific studies have shown diets high in saturated fat, sugar and salt are the main contributors to chronic disease and inflammation, some of which include: cardiovascular disease, type two diabetes, some cancers, arthritis, Alzheimers, dementia and depression.

In a nutshell, following an ‘anti-inflammatory diet’ is all about healthy eating. It’s about eating a good variety of fruits, vegetables, whole-grains, plant-based proteins (e.g. legumes and nuts) and oily fish (e.g. salmon, sardines). Don’t get bogged down about single ‘superfoods’ to fight inflammation (aka. turmeric) – think big! Think whole foods!

If you’re keen to do something different, but the family isn’t convinced, you could use the same technique with green beans, snow peas or broccoli. All of these greens will grill beautifully and pair nicely with the flavours of feta, mint and almonds.

Grilled Asparagus with Almonds

Ingredients
  

  • ½ lemon juiced
  • 2 tbsp oil, olive extra virgin
  • 1 bunch asparagus, fresh woody ends removed
  • 60 g cheese, feta reduced fat
  • ½ bunch mint, fresh leaves only, chopped
  • 60 g almonds, flaked (½ cup)

Instructions
 

  • Grill the asparagus with olive oil in a frypan, rotating the asparagus every minute or so. Serve on a plate.
  • Squeeze lemon juice over the asparagus and sprinkle with mint leaves, flaked almonds and feta.
  • Serve and enjoy!
