Salads are a really great way to nourish your body each day, with vegetables being the star of the show. They can, however, get a little same old, same old. Salads can also feel un-satisfying, if not created correctly, leading us to feeling peckish only 2 hours later.

If you’ve got a little bored with your salad creations of late, then you’ll love this recipe. Packed full of delicious flavour and absolutely simple to make, this herbed chicken and chickpea salad for lunch or dinner will satisfy your hungry well into the afternoon or evening.

Herbed Chicken and Chickpea Salad

Ingredients
  

  • 1 tbsp oil, olive
  • 1 chicken, thigh skin removed, chopped into pieces
  • 3 tsp herbs, dried, mixed
  • 80 g cheese, feta cubed
  • 1 can chickpeas, canned drained and rinsed
  • 1 avocado cubed
  • 4 cup lettuce, leaves, mixed
  • 1 cucumber, any sliced
  • 1 capsicum, red sliced
  • 1 lemon juiced

Instructions
 

  • Heat the olive oil in a non-stick frying pan over medium-high heat. Add the chicken pieces and dried mixed herbs and cooked until chicken is golden and cooked through. Remove from the heat and set aside.
  • Meanwhile, evenly distribute the salad leaves, cucumber, red capsicum, avocado, cheese and chick peas over four plates.
  • Top each plate with a serve of herbed chicken and drizzle with lemon juice. Serve and enjoy!
