Mixed Vegetable Slaw with Miso Tahini Dressing
Recipe Serves 6 people
Ingredients
- ¼ cabbage, red shredded
- ¼ cabbage, white shredded
- 2 carrot thinly sliced
- 1 capsicum, red thinly sliced
- ½ onion, any thinly sliced
- 1 cup snow peas thinly sliced
- 1 cup mung bean sprouts
Dressing
- 3 tbsp tahini
- 1 tsp miso paste
Instructions
- Place all vegetables in a large mixing bowl.
- Put a jug on to boil while adding the tahini and miso paste to a small/medium bowl.
- Once water has boiled, allow to cool slightly before slowly adding water to the miso-tahini bowl and mixing to a preferred consistency.
- Either add the dressing to the salad bowl and mix through the salad or serve salad and then drizzle the dressing over the top.
