cauliflower soupOne of our wonderful members has recently won a challenge! The challenge was to create a recipe using a key ingredient: Cauliflower! She created this beautiful aromatic Moroccan Spiced Cauliflower Soup. We cooked it up in The Healthy Eating Hub Kitchen; the smells were amazing and the taste was even better.

Soups make fantastic winter comfort foods that can be super healthy for you too. Loading your soup up with vegetables is a great way to sneak in your daily vegetable serves. It makes for a filling and low calorie meal which you could even use as a snack.  Get creative, have fun and enjoy the perks of winter! (There are plenty of perks, by the way!)

Moroccan Spiced Cauliflower Soup

Ingredients
  

  • ½ head cauliflower
  • oil, olive, spray
  • ½ tsp turmeric
  • ½ tsp Moroccan seasoning GF if required
  • ½ tsp ginger, spice, ground
  • 500 ml stock, chicken GF if required, vegetable stock for vegan option
  • 125 g chick peas, canned

Instructions
 

  • Preheat oven 180° fan-forced.
  • Spray foil with oil. Place broken up cauliflower onto foil and give a light spray with oil.
  • Sprinkle turmeric, moroccan spice and ginger spice over the cauliflower and give another light spray with oil. Wrap the cauliflower into a parcel and place in the oven and bake for about 40-50 minutes.
  • Rinse and drain chick peas and place into bowl. Add half the chicken stock in and blend together. Add the rest of the stock and baked cauliflower and blend all together until desired texture is achieved.
  • Serve with crusty toasted sourdough bread.
