It’s getting warmer and most of us are looking for any excuse to get outside.  Festivals, fetes, fairs and open days are all calling you to grab the family and spend some time in the sunshine (while being sun-smart, of course). And what better way to enjoy the outdoors than to pack up a picnic.

Picnic’s can be tricky things – eating with a knife and fork is near impossible when your lounging on the picnic blanket, getting food or drink everywhere is bound to attract the ants and if you’ve prepared lovely platters, keeping the flies away can be an arm waving workout in itself. So what do you pack for a picnic that’s easy to prepare and easy to eat? Try this picnic sandwich recipe, which is not only simple but nutritionally balanced as well!

Pack this picnic sandwich up with some infused water, a sweet treat  and some sports equipment (I’d recommend a badminton set) and head out to some of Canberra’s best picnic spots:

Perfect Picnic Sandwich

Ingredients
  

  • 100 g mushroom, common sliced
  • 1 tsp oil, olive
  • 1 cobb loaf
  • 2 tbsp hummus
  • 1 cup spinach, baby
  • 1 capsicum, red sliced into strips
  • 1 cup cabbage, red roughly chopped
  • 150 g chicken, breast, cooked shredded
  • 100 g cheese, jarlsberg

Instructions
 

  • In a non stick frying pan, heat olive oil and sauté mushrooms until soft.
  • Using a bread knife slice a large round hole out of the top of the cobb loaf, keeping the top to use as a lid.
  • Hollow out the inside of the cobb loaf by pulling out the inner part of bread (discard this part). Leave approximately 2cm thickness inside the crust.
  • Spread the hummus along the bottom of the cob loaf.
  • Lay the baby spinach across the bottom of the cobb loaf, covering the hummus. Continue layering the sandwich ingredients until the cobb loaf is full. Place the cobb loaf lid on the top.
  • Wrap the sandwich loaf tightly in cling wrap and store in the fridge until your ready to picnic!
  • Cut into quarters and serve. Enjoy!
