Pork Burgers with Rainbow Slaw

There is something so mouth watering about pulled pork burgers and creamy coleslaw. But going out to buy one those bad boys is often expensive and laden with extra salt, sugar and fat. So we have created a simple, quick and healthy version of this delectable meal to share at home with the family.

Pork is a rich source of iron, zinc, vitamin B12 and protein but I often don’t know what to do with it other than pork chops. Making burgers can be a healthy dinner to mix things up.

The other great thing about making burgers is you can make the pork patties in advance and bring to work for lunch the next day or have a night off cooking later on in the week! Just heat them up in the microwave or a sandwich press.

Pork Burgers with Rainbow Slaw

Ingredients
  

  • 500 g pork, mince
  • 1 egg
  • ½ onion, red finely diced
  • 1 tbsp worcestershire sauce
  • 4 tsp mustard, wholegrain
  • 2 tbsp tomato paste
  • 1 tsp paprika, spice
  • ¼ cup breadcrumbs, wholemeal
  • ¼ cup flour, wholemeal, plain

Rainbow Slaw

  • 2 cup cabbage, red thinly sliced
  • 1 carrot grated
  • 1 stalk celery finely chopped
  • ½ apple, red grated or finely chopped
  • 60 g aioli (¼ cup)

For Burgers

  • 3 cup spinach, baby
  • 6 burger buns, wholegrain

Instructions
 

  • In a large bowl place pork mince, egg, red onion, Worcestershire sauce, wholegrain mustard, tomato paste, paprika and quinoa.
  • Using clean hands or a wooden spoon, stir mixture until fully combined.
  • Place flour in a bowl or on a plate.
  • Separate mince mixture into 6 parts. Shape into balls and roll through flour.
  • Heat a non-stick pan over medium heat. In batches press the mince balls into the pan to make patties. Cook over low heat for 5-6 minutes each side. The trick is to ensure they’re cooked through without burning the outside.
  • While the patties are cooking, combine the red cabbage, carrot, celery, apple and aioli in a bowl and stir until all ingredients are lightly coated.
  • Once patties are cooked served on buns topped with slaw and baby spinach.
