San Choy Bau
San choy bau is often a go-to when we eat out. But once I found out how easy it is to make at home this has become one of my favourite weeknight meals. This twist on a classic Chinese dish is loaded full of vegetables with delicious flavours. You will find yourself eating your vegetable serves for the day, with no difficulty at all.
San Choy Bau
Recipe Serves 4 people
Ingredients
- 2 tbsp oil, sesame
- 2 clove garlic crushed
- 1 tbsp ginger, fresh finely grated
- 500 g pork, mince lean
- 1 capsicum, red diced
- 1 zucchini diced
- 1 tbsp soy sauce GF if required
- 2 tbsp oyster sauce GF if required
- 3 shallot thinly sliced
- ½ lime juiced
- 1 cup bean sprouts rinsed and trimmed
- 12 lettuce, leaves, mixed iceberg or cos
- ⅛ bunch coriander, fresh
Instructions
- Heat a wok or large frying pan over high heat until hot. Add half of the sesame oil to the pan and swirl to coat. Add garlic, ginger and pork. Stir-fry for 2 to 3 minutes or until pork just changes colour.
- Add the capsicum and zucchini and continue to stir fry for a further 2 minutes.
- Add soy sauce, oyster sauce, shallots, 2 tsp of lime juice and the remaining sesame oil. Stir-fry for a further 2 minutes or until heated through. Stir in beansprouts.
- Spoon pork mixture into lettuce leaves. Sprinkle with coriander. Serve and enjoy!
