It’s easy to get in a rut with breakfast. You have the same cereal or the same toast combination day-in-day-out because it’s easy, it’s what’s there and you don’t have to think about it. Fair enough.

But, why not expand that daily repertoire? (It sounds fancy when I say it in french!).

What if I told you that you can have a toasted sandwich for breakfast? There would be rioting, in the streets. ‘Witch!’ They’d say, ‘blasphemy.’

When you think about it, a toasted sandwich gives you a pretty good start to the day. There’s a source of carbohydrate to give your body and your brain fuel. There’s protein from the cheese (and/or ham if you’d prefer). And, if you can fit some vegetables in there with your wholemeal bread, then you are starting the day with a reasonable source of fibre. It sure beats rice puffs or chocolate cereal in the nutrition stakes.

This breakfast sandwich is perfect for the sandwich press and can be left to cook while you finish getting the kids ready or putting your face on in the morning. It also makes a pretty delicious lunch option, which will have those in the lunchtime sandwich press cue peering over your shoulder to copy the idea. Give it a whirl this week!

Toasted Basil Breakfast Sandwich

Equipment

  • Sandwich press

Ingredients
  

  • 2 slices bread, wholemeal
  • ½ tbsp basil pesto
  • 1 tomato, roma
  • 2 slices cheese, tasty, low fat
  • ½ cup spinach, baby

Instructions
 

  • Spread 1 slice of bread with pesto. Stack sandwich with tomato slices, baby spinach and cheese.
  • Place on a sandwich press and toast until cheese has melted.
  • Serve and enjoy!
