IMG_5751Who doesn’t love a simple and fresh pasta recipe! This one has a special touch with beautifully roasted pine nuts. Eating healthy doesn’t have to be boring, and repetitive. You can keep your meals interesting by adding in different flavours, herbs and/or spices, think chilli and basil with a drizzle of lemon.

You would easily get about 3 serves of vegetables with this recipe. Have this for lunch and you’ll be laughing all afternoon with energy! With no urge to binge on sweet foods that might be readily available in your work cafe.

Toasted Pine Nut and Chicken Pasta

Ingredients
  

  • 1 chicken, thigh finely diced
  • 20 g pine nuts lightly toasted (1 tbsp)
  • 1 chilli, red, small finely chopped (de-seeded for more mild spice)
  • 1 clove garlic crushed
  • ¼ tbsp oil, olive
  • ¼ capsicum, red diced
  • ¼ capsicum, yellow diced
  • 50 g pasta, high fibre dry
  • 1 cup spinach, baby
  • bunch basil, fresh
  • ¼ lemon juice

Instructions
 

  • Heat oil in a fry pan, add chicken and cook until golden. Set aside. Sauté chilli and garlic in the same heated pan until aromatic, approximately 2 minutes. Next add the capsicums into the pan and sauté for 5 minutes. Cook pasta per packet instructions.
  • Meanwhile, lightly toast the pine nuts on low – medium heat in a separate pan. Keep watch! They can burn easily and quickly. Set pine nuts aside.
  • Add spinach to the pan of vegetables, allow to wilt down. Add chicken back to the pan to reheat through for the last 1-2 minutes and add salt as desired.
  • Serve with fresh basil leaves, a sprinkle of pine nuts and a splash of lemon juice.
