This watermelon salad is the perfect side dish for a sausage sizzle on a boiling hot day (and goodness knows we are going to get some of those this summer). What’s more: watermelon and cucumber are rich in H2O – the good stuff to keep you hydrated throughout the warmer weather.

Ingredients
  

  • 1 cucumber, telegraph cut into small chunks
  • 2 cup watermelon cut into cubes
  • ½ capsicum, red finely chopped
  • ½ shallot finely sliced green part only
  • ¼ bunch mint, fresh finely chopped leaves
  • bunch parsley, flat leaf, fresh finely chopped
  • 2 tbsp almonds, slivered
  • 1 tbsp oil, olive
  • pepper

Instructions
 

  • Toss all ingredients together and enjoy as a lovely summer side salad, perfect for a BBQ.
